Hide Restaurant

In the heart of Mayfair, Hide brings together craftsmanship, elegance, and imagination, a restaurant and bar by Hedonism Wines and chef Ollie Dabbous, designed to be nothing less than London’s finest, setting a benchmark for dinging in London. Fraser Randall was appointed as Client Representative, Project Manager, Cost Manager, and Construction Manager, entrusted to deliver the vision from first concept to final opening.

Working closely with the client, Fraser Randall helped shape the every aspect of the project’s delivery: selecting the design team, navigating licensing and planning approvals, and establishing a cost and programme framework capable of supporting such an ambitious brief. Throughout, the ambition was matched with clarity, ensuring the boldness of the vision was supported at every step.

Set across three levels, Hide offers distinct experiences: the handsome and homely ‘Ground’, a stylish contemporary space centred around a wood-fired bakery; the elegant, light-filled dining room of ‘Above’, commanding views across Green Park; and ‘Below’, an intimate world of private dining rooms, an exceptional bar, and an extraordinary wine cellar, drawing on Hedonism’s world-renowned collection.

At the heart of the restaurant, a striking spiral staircase anchors the experience- a wild, organic form that flows seamlessly through the floors, uniting each space with sculptural precision.

Fraser Randall’s leadership ensured that vision translated into reality. The project required seamless integration between base build and fit-out phases, careful coordination with the building’s landlords, and agility to navigate design evolution, complex site logistics, and live surroundings, all within the demands of Mayfair’s high-profile environment.

Managing the complexity of the project meant breaking it down into clear stages, enabling the client team to make confident, informed decisions at every point. As Executive Chef and Partner Ollie Dabbous reflects,
